Citric acid anhydrous is a translucent, free-flowing crystalline powder, odorless and with a strongly acidic taste. This is a cereal starch that is low in ash and protein content. It is made from molasses, lemon, lime, and pineapple juice. Citric acid anhydrous is commonly used as an acidifier, dispensing agent, acidulant and antioxidant in food, and as a water-conditioning agent.
