Buttermilk powder is made out of dehydrated buttermilk through spray drying until it becomes a fine powder. Buttermilk powder has a longer shelf life than liquid buttermilk and it has a low moisture content which prevents bacteria from growing. It has a pale-yellow color and a rich creamy flavor. Buttermilk powder is commonly used as substitution for skimmed milk powder or whole milk powder, sauces, soups, baked goods, sauces, confectionary products, and desserts.
